An easy tequila shrimp marinade that's packed with flavor, then cooked to perfection before being stuffed into soft taco shells and topped with your favorite taco toppings!
Combine all of the marinade ingredients in a bowl.*
Add the shrimp and toss to coat in the marinade. Cover and refrigerate for at least an hour, up to four hours.
Remove the marinated shrimp from the refrigerator and let it rest at room temperature for 15 minutes before cooking.
Place a pan over medium heat. Add the shrimp and all of the marinade to the pan. Cook the shrimp for 2-3 minutes per side until pink and cooked through and the marinade is reduced. Squeeze in the juice from the fresh lime wedges, and stir into the shrimp.
Turn off the heat from underneath the pan, and toss the shrimp in the reduced marinade.
Serve immediately on warmed tortillas** with desired toppings.
Notes
*The shrimp and marinade can also be placed in a large zip-top bag. Massage the marinade into the shrimp and refrigerate as directed.**Warm tortillas in a dry pan over medium heat for about 30 seconds per side, or in the microwave for about 30 total seconds.Calories are based on provided toppings and one 6" flour tortilla per taco.
