In a large saute pan over medium heat, cook chopped bacon until nearly all fat is rendered. (You'll want the bacon to be crispy when you're done with the entire recipe!) Leave bacon and bacon fat in the pan.
Add chopped green onion, and cook about 5-7 minutes. Add onion, cook 2-3 minutes. Turn heat to medium-low. Onion should absorb the colors and flavors from rendered bacon fat.
Add jalapeño, shallot, and spices. Stir in with other ingredients in the pan, and cook about 1-2 minutes.
Add garlic, mix in, and cook another 1-2 minutes. Garlic will be very fragrant.
Push all veggies and bacon to one half of the pan. Add the thinly sliced roast beef to the open half of the pan, and allow to cook for a few seconds before gently mixing it with the veggies. Cook for about 2-3 minutes total, until the majority of the beef has browned.
Add cheese, and mix into the beef and veggies until it is completely melted.
Spoon half of the filling to the center of the cheddar wrap, and roll up. Repeat for the second wrap.
Serve hot!
Notes
THIS RECIPE YIELDS 2-4 WRAPS. Substitute Cajun seasoning for ALL seasonings if you like! The jalapeño and cayenne add a lot of heat - feel free to omit either for a less spicy version. Use any cheese that you have on hand if you don't have cheddar and mozzarella. Instead of deli meat, feel free to use thinly sliced ribeye for a more authentic approach. If you do not have cheddar wraps, any wrap will do! Or a flour tortilla.
