12wonton wrappers (3 1/2" square size)cut into triangles

5ouncessushi grade ahi tuna*
2Tbsp.minced shallotsabout one small shallot
1Tbsp.low-sodium soy sauce
2tsp.freshly squeezed lime juice1/2 a lime, or to taste
2tsp.sesame oil
1/2tsp.srirachaor to taste
smallpinchginger powder
saltto taste, if desired
additional toppings ::
1avocadocut into slices or chunks
black sesame seeds
chopped scallions
fresh jalapeño slices
Instructions
for baked wonton chips ::
Preheat the oven to 350 F. Slice the wonton wrappers in half, from corner to corner, to create two equal-sized triangles from each one. Place the wonton triangles onto a baking sheet lined with a baking rack.
Mix the olive oil and lime juice together in a shallow dish. (They won't get along very well, but that's okay.) Use a pastry brush to dab both liquids, then gently paint the top of each wonton triangle. (Alternatively, just spray the triangles with baking spray, then squeeze some lime across the top of them.)
Sprinkle all coated triangles with flaky sea salt, then with white sesame seeds.
Bake for 10-12 minutes until golden brown. Remove from the oven, and set aside to cool.
for sriracha sauce ::
Mix mayonnaise, sriracha, and lime juice together in a small bowl. Season with salt, to taste. Keep refrigerated until ready to use.
for spicy tuna tartare ::
Cut tuna into small, 1/2" cubes. Place tuna into a large mixing bowl, followed by shallots, soy sauce, lime juice, sesame oil, and sriracha. Use a fork (or your hands) to gently toss the tuna in the other ingredients, until evenly coated. Gently sprinkle in powered ginger, and toss to coat again. Taste the tuna mixture, and add a pinch of salt if you find it necessary.
to build nachos ::
Scatter baked wonton chips across a plate to cover the surface. Top with tuna, then with avocado. Drizzle sriracha sauce across the top, then finish with a sprinkling of chopped scallions (green onions) and black sesame seeds. Serve immediately, and enjoy!
