Combine water and sugar in a small saucepan over medium heat. Stir until sugar dissolves.
Add blackberries and a small pinch of salt. Stir to coat the blackberries in the syrup. Bring to a simmer, and simmer 10-15 minutes until the syrup is very fragrant and darker in color.
Remove the saucepan from the heat and allow it to cool. Strain the syrup through a fine mesh strainer into a glass airtight container. Note: Don't push down to squeeze any extra juice from the berries; this makes the syrup cloudy.
Keep blackberry simple syrup refrigerated for up to two weeks, or add a small splash of vodka and store for up to a month.
