1/2medium white onionfinely chopped (about 1/3 cup)
1smallroma tomatofinely chopped (1/4-1/3 cup)
2small cloves garlicminced
1/2fresh jalapenode-seeded and finely chopped (about 2 Tbsp.) (optional!)
2Tbsp.finely chopped cilantrooptional
freshly squeezed juice of 1/2 lime
salt and pepper to taste
Instructions
Halve the avocados, remove the pits, and then peel the skins off of the avocado flesh. Chop the flesh into smaller cubes, then add to a large bowl.
Add chopped onion, tomato, garlic, and jalapeño. Use a potato masher to mash everything into the avocado. Add cilantro and lime juice, and stir in with a spoon.
Add a healthy pinch of salt, and a pinch of pepper. Stir thoroughly, then taste the guacamole. Add a little pinch of more of salt, then stir and taste again. Adjust to fit your tastes!
Serve immediately.
Notes
Don't be shy on the salt and pepper - it really enhances the flavor!
