Small Batch Roasted Garlic Cheese Bread

An easy recipe for melted, gooey, cheesy garlic bread for two.

For the Roasted Garlic:

  • 1 head raw Garlic
  • Olive Oil
  • pinch Salt

For the Roasted Garlic Cheese Bread:

  • 2 5" slices of Italian Bread
  • 2 tbsp. Unsalted Butter softened
  • 1 head Roasted Garlic*
  • 1/4 cup finely grated Parmesan best quality
  • 1/4 tsp. Crushed Red Pepper optional
  • 1/4 tsp. Kosher Salt
  • 1/4 tsp. freshly cracked Black Pepper
  • 1/4 tsp. Garlic Powder
  • 1 tbsp. freshly chopped Parsley
  • 4 oz. low-moisture shredded Mozzarella about 1 cup


For the Roasted Garlic:

  • Preheat the oven to 375 F. Peel off the flaky, papery layers of the garlic head. Cut the top 1/4" off of the garlic, exposing the cloves inside.
  • Place the garlic on a sheet of foil that is large enough to wrap around it. Drizzle olive oil over the exposed garlic cloves, then sprinkle a pinch of salt on top.
  • Wrap the garlic in the foil and place it into a large oven-safe ramekin or muffin tin. Bake for 40-45 minutes at 375 F until golden brown and very soft.

For the Roasted Garlic Cheese Bread:

  • Turn the oven temperature to 350 F. Line a small rimmed baking sheet with parchment paper.
  • Slice a 5" section off of a loaf of Italian bread. Slice the bread in half lengthwise. Carefully cut 3/4 of the way down the middle of each half, leaving the bottom of the bread still intact. (See photos in blog post for reference.) Set aside.
  • Place the softened butter and roasted garlic cloves in a small bowl. Smash the garlic into the butter until thoroughly mixed. Stir in the parmesan, crushed red pepper, salt, pepper, garlic powder, and parsley until completely combined.
  • Divide the roasted garlic butter between the bread slices. Top the bread with the shredded mozzarella, dividing it equally over each slice.
  • Bake at 350 F for 10 minutes. Switch the oven to broil, and broil for 2-3 minutes until the cheese is bubbling.**
  • Remove from the oven, and sprinkle with more freshly chopped parsley (if desired). Serve hot!


If you'd rather not make roasted garlic at home, some specialty stores (such as Whole Foods) sell roasted garlic cloves. I recommend about 10-12 cloves for this recipe.
**If any piece of bread is unevenly cut and half of it is much closer to the broiler, feel free to loosely tent that part of the bread with foil before broiling to prevent it from burning.
