Crunchy Chicken Caesar Wraps with Hatch Chile Caesar Dressing

Crispy chicken tenders, crunchy romaine and croutons, Parmesan cheese, and a creamy Hatch green chile Caesar dressing come together in these ridiculously easy (and SUPER delicious) Chicken Caesar Wraps! They're ready in 15 minutes and packed with tons of flavor and crunch!
3tablespoonsfinely chopped Roasted Hatch Green Chiles
1teaspoonfresh Lemon Juice
1small Garlic Clovegrated on a microplane or very finely minced
1/2teaspoonWorcestershire Sauce
2tablespoonsGrated Parmesan Cheese
Cracked Black Pepperto taste (at least 1/4 teaspoon)
For the Chicken Caesar Wraps:
2large Chicken Tendersabout 1/2 pound / 8 ounces
3cupspacked Chopped Romaine Lettuce
1/3cupHatch Green Chile Caesar Dressing
1/3 cupcrushed Croutons
Cracked Black Pepperoptional
3largeBurrito-Sized Flour Tortillas
Instructions
Make the Green Chile Caesar Dressing. In a small bowl, combine all of the dressing ingredients (1/4 cup Mayonnaise, 1/2 teaspoon Dijon Mustard3 tablespoons finely chopped Roasted Hatch Green Chiles, 1 teaspoon fresh Lemon Juice, 1 small Garlic Clove, 1/2 teaspoon Worcestershire Sauce, 2 tablespoons Grated Parmesan Cheese, and Cracked Black Pepper). Stir to thoroughly mix, then season with pepper to taste. You can use it right away, or cover and refrigerate it for 15 minutes (or up to overnight) to give the flavors time to blend.
Make the Chicken Caesar Filling. On a large cutting board (the biggest you’ve got!), layer 3 cups packed Chopped Romaine Lettuce, 2 large Chicken Tenders, and 1/3 cup Hatch Green Chile Caesar Dressing. Chop everything together, mixing and chopping as you go, until the chicken and lettuce are cut into small pieces and everything is evenly combined.Mix in 1/3 cup crushed Croutons and a few cracks of Cracked Black Pepper, if desired.
Make the Wraps. Lay 3 large Burrito-Sized Flour Tortillas on a flat surface. Divide the chopped chicken Caesar filling between them, placing the filling directly in the center of each tortilla. There should be about one heaping cup per tortilla.Spread the filling slightly, forming it into almost a line across the center of the tortilla, leaving about 1 1/2″ – 2″ border at each edge. Fold in the sides of the tortilla, then roll it up into a wrap, tucking the sides in as you roll it. Cut in half and enjoy!
Notes
I love using crispy chicken tenders from the deli department at the grocery store for this!
Grab lettuce and croutons from the salad bar if you don't want leftovers of those ingredients.
Use any Caesar dressing and stir some roasted green chiles into it if you prefer!
Hatch green chiles are amazing, but if you can't find them, any green chiles will work!
The tortillas roll best when they're room temperature or slightly warm.
