This Italian Sub Chicken Salad recipe is packed with pepperoni, pepperoncini, parmesan, and a tangy, creamy dressing inspired by a really good deli sub. It's an easy, flavor-packed recipe that's perfect for sandwiches, wraps, or eating straight from the bowl!
2tablespoonsfinely chopped Red Onionor white onion
1/3cupfinely chopped Pepperoncini
1/4teaspoonGarlic Powder
1/4teaspoonDried Oregano
1/3cupShaved Parmesan
Instructions
Crisp the Pepperoni. Chop 5-6 pepperoni slices into 1/2″ pieces. (You'll have about 1/4 cup finely chopped Pepperoni). Heat a small non-stick pan over medium heat, then cook the pepperoni, tossing it occasionally so it cooks evenly, for 3-4 minutes until crispy. Transfer to a paper towel to drain. (I use about 5-6 slices of pepperoni from the deli department for this).
Combine the Creamy Ingredients. In a large(ish) mixing bowl, combine 1/4 cup Mayonnaise, 1/4 cup Plain Greek Yogurt(full fat for the most flavor), and 1 tablespoon Dijon Mustard. Use a spoon to stir them together until evenly mixed.
Add the Fun Stuff. Add 1 1/2 cups Shredded Chicken, 2 tablespoons finely chopped Red Onion(or white onion), 1/3 cup finely chopped Pepperoncini, 1/4 teaspoon Garlic Powder, 1/4 teaspoon Dried Oregano, and 1/3 cup Shaved Parmesan (crumble the Parm with your fingers as you add it). Stir to combine everything well.
Taste and Adjust. Taste a spoonful, then add more of anything if you want to! For more flavor, add a pinch of salt and pepper to start. For more kick, add a splash of pepperoncini brine.
Notes
Rotisserie chicken or lightly seasoned leftover chicken breast or chicken thighs work great for this recipe. If the chicken seems dry, you may need to add more mayo + Greek yogurt blend to make it creamier.
