A small batch kale salad dressing recipe with dijon, apple cider vinegar, herbs, olive oil, and honey. This small batch recipe makes 1/4 cup of dressing.
1tbsp.good quality Mayonnaiselike Duke's or Hellmann's
1tsp.Dijon Mustard
1tsp.Honeyor Apple Cider Vinegar
2tsp.Apple Cider Vinegar
2tbsp.good quality Extra Virgin Olive Oil
1/4tsp.dried Oreganoor 1/2 tsp. fresh
1/8tsp.Garlic Powder
Salt and freshly cracked Black Pepperto taste
Instructions
Whisk the Base Ingredients. In a small bowl or jar, whisk together the 1 tbsp. good quality Mayonnaise, 1 tsp. Dijon Mustard, 1 tsp. Honey, and 2 tsp. Apple Cider Vinegar until well blended. (It will be liquid-y.)
Stir in Seasonings. Stir in 1/8 tsp. Garlic Powder and 1/4 tsp. dried Oregano.
Add Olive Oil and Season to Taste. Slowly drizzle in the 2 tbsp. good quality Extra Virgin Olive Oil while whisking to emulsify the dressing. Taste and adjust the seasoning if needed.
Notes
Want more brightness? Add a little more vinegar. Need more richness? Add another drizzle of olive oil.
