1/3cupDried Cranberriesor 1/2 cup chopped Fuji Apple
1/4cupfinely chopped Celery
1/4cupchopped Green Onions
3tbsp.chopped Pistachios
1/4tsp.Garlic Powder
1tbsp.finely chopped Fresh Parsley
1tbsp.finely chopped Fresh Basil
1/4tsp.freshly cracked Black Pepperplus more to taste
2large, fresh Croissants
Instructions
Slice the 1 medium Avocado in half, and carefully remove the pit with a knife. Use a spoon to scrape the avocado into a large mixing bowl. Add the 2 tbsp. good quality Mayonnaise, 1/2 tsp. Salt, and 1 tbsp. Fresh Lemon Juice. Use a muddler (or a fork) to mash the avocado into a smooth paste and combine with the other ingredients.
Add 1 cup shredded Chicken, 1/3 cup Dried Cranberries, 1/4 cup finely chopped Celery, 1/4 cup chopped Green Onions, 3 tbsp. chopped Pistachios, and 1/4 tsp. Garlic Powder to the mixing bowl. Stir to evenly combine all ingredients.
Stir in 1 tbsp. finely chopped Fresh Parsley, 1 tbsp. finely chopped Fresh Basil, and 1/4 tsp. freshly cracked Black Pepper. Taste and add more of any ingredient to fit your taste.
Divide the avocado chicken salad between 2 large, fresh Croissants. Serve with your favorite sides, and enjoy!
Notes
Mayonnaise can be replaced with Greek Yogurt, but the flavor won't be quite as rich.Lemon Juice can be substituted with lime juice. I always recommend using fresh citrus juice for any recipe; not jarred citrus juice.Rotisserie Chicken can be substituted with any shredded, cooked chicken than has been lightly seasoned with mainly just salt and pepper.Dried Cranberries can be substituted with 1/2 cup chopped Fuji apple, or any sweet-ish apple of your choice! Increase the amount of apple to fit your taste; or use the entire apple to avoid leftovers.*SALT: I use Diamond Crystal Kosher Salt for all of my recipes, and I do recommend starting with at least 1/2 teaspoon of it to make this chicken salad flavorful. If you're using table salt, start with 1/4 teaspoon and adjust as needed. As always, season your chicken salad to best fit your taste.Fresh Parsley and Basil are great herbs for this recipe, but you can use any of your favorite fresh herbs to mix in.Substitute Croissants with lettuce wraps for a low carb option.
