need a drink? SAME. like, ten. here’s a fresh + spicy pineapple jalapeño margarita that will provide you with a millisecond of calm if you’re feeling angry, anxious, hurt, or scared today.

you’ll need :
• 6 chunks fresh Pineapple (about 1″ in size)
• 2-3 fresh Jalapeno Slices
• tiny pinch Sea Salt
• 4 oz. Tequila (blanco [silver] or reposado)
• 2 oz. Pineapple Juice
• 2 oz. fresh Lime Juice
• 1 oz. Triple Sec
• 1 tsp. Agave Syrup

what to do :
1. Muddle the pineapple chunks, jalapeño slices, and a pinch of salt in a cocktail shaker.

2. Pour in the tequila, pineapple juice, lime juice, triple sec, and agave syrup. Fill the shaker with ice, secure the lid, and shake vigorously for about 20 seconds.

3. Divide the margarita between the glasses, and garnish with a pineapple chunk, lime wedge, or a pineapple leaf.

4. Cheers anyone you love, including yourself, and know that you’re not in this alone.

Small batch chocolate chip muffins (made with Greek Yogurt) are soooo good as a grab-and-go breakfast or snack!

This recipe makes just SIX muffins, and they'll definitely keep in an airtight container on the counter for a few days. (Just add a paper towel to the container to absorb any extra moisture to prevent the muffins from getting soggy.)

I'm not looking to turn my oven on again anytime soon, so I've been making these Mediterranean Chicken "Tacos" using shredded rotisserie chicken tossed with a little greek seasoning. 🤓

Other than that, I layer store-bought hummus (like red pepper or roasted garlic) onto mini naan flatbread, add some thinly sliced red onion, and kale tossed in my favorite homemade Mediterranean vinaigrette. Then I pile on the shredded chicken and a healthy amount of crumbled feta cheese. You could leave the chicken out and just add a ton of kale if you prefer, too. :)

It's easy, packed with flavor, and ready in less than 10 minutes if you use rotisserie chicken! I recommend about 1/3 cup of shredded chicken per taco, but use however much you like!
