My FAVORITE espresso martini recipe is finally pos My FAVORITE espresso martini recipe is finally posted on the blog!  I shared the reel yesterday, but here's a few photos, too!

I made this recipe for a Valentine's Day cooking class that @kasimjhardaway and I hosted back in February, and I've been itching to photograph it and share it with you ever since!

The key factors here are good espresso, good coffee liqueur, and a brown sugar syrup for extra depth and richness. I love grabbing some espresso from my favorite local coffee shop (@messengercoffee or @oddly are amazing if you're in KC), and keeping it refrigerated until I make these.

For coffee liqueur, @kahlua is a popular one, but I REALLY love @forthave_spirits "Brown" for this recipe. I know you can find it at @kccellarrat in KC!

As far as the brown sugar syrup goes, I PROMISE you that it's easy. Just combine equal parts brown sugar and water in a saucepan over medium heat, and stir until the brown sugar dissolves. That's it. Let it cool a bit, because you'll be mixing it with an egg white for this martini (for that frothy top layer), and if the syrup is too hot, it won't end well.

I’ve been on a serious salad kick lately, and I I’ve been on a serious salad kick lately, and I think this one may be my absolute new favorite. I teamed up with @mobeefcouncil to create this grilled Steak Salad with Balsamic Vinaigrette (for 2!), and it. is. DELICIOUS.

I created this salad with Top Sirloin Steak in mind. A Top Sirloin steak is so versatile; you can use it for kebabs, stir-fry, or salads, and it’s a super affordable cut of beef that delivers really big on flavor!I always recommend using a meat thermometer to determine when your steak is cooked; I am a medium-rare girl, so I cooked this filet to 145 F.

Top Sirloin is considered lean beef, there’s less fat but still tons of flavor! Lean beef is defined as a cut of beef that contains less than 10 grams of total fat (or less), 4.5 grams of saturated fat (or less), and less than 95 mg of cholesterol per serving. Even better, a serving of lean beef provides 10 essential nutrients (like protein, zinc, vitamins B6 and B12, and iron) in about 170 calories.

I’m so ready for the warm weather to officially be here, and I can’t think of a better way than to kick off my birthday month with a hearty Steak Salad with Balsamic Vinaigrette. :)

Here’s how to make it!!

Ingredients for two Steak Salads:
6 oz. top sirloin
grape seed oil
Salt & pepper
1 head romaine lettuce, chopped
1 cup cherry tomatoes, halved
½ red onion, thinly sliced
1 cup roasted corn (from 1 ear)
½ cup gorgonzola crumbles
Balsamic vinaigrette
 
Ingredients for Balsamic vinaigrette:
2 tsp. Mayonnaise
2 tsp. Maple syrup
2 tsp. Dijon mustard
3 tbsp. Balsamic vinegar
¼ tsp. Garlic powder
¼ tsp. Oregano
Pinch each of Salt and pepper
2 tbsp. Olive oil

Heading into the week and craving some greens, so Heading into the week and craving some greens, so this Ground Turkey Taco Salad is totally on my mind!

The turkey has so much flavor, but the DRESSING. Let's talk about the dressing. I blended Greek Yogurt and my favorite salsa together, added some fresh lime juice, honey, cilantro, green onions, and a pinch of salt to bring it all together.

The recipe makes two salads, and I encourage you to use your favorite salad greens! I use arugula because it's peppery and delicious, but you do you. 🥰

Dropped this Small Batch Miso Caesar Dressing on t Dropped this Small Batch Miso Caesar Dressing on the blog last night, and it is gooooood stuff.

I know some people are not super into anchovies, so if you're a Caesar fan (but not so much the anchovy part), THIS IS FOR YOU! I use White Miso paste, which is the mildest of misos, and it fully delivers on that umami flavor that anchovy paste also has.

This recipe makes just over 1/2 cup, so it's really great for two large (entrée size) salads, or four small (side size) salads.

Other than the miso / anchovy paste swap, this is a traditional Caesar dressing recipe with egg yolk and the whole shebang. It's amazing, and I HIGHLY recommend saving it to make later!

Also ... one last note ... it definitely benefits from resting in the refrigerator for about an hour before serving. The flavors have a chance to blend together, and it goes from good to great. 🥰
