Ingredient Notes for the Honey Chipotle Chicken:
Chicken breast or chicken thighs are perfect for this recipe. If you’re using chicken thighs, it’s easier to cook the boneless version for these tacos. Remove as much of the fat as possible from the chicken (no matter which cut you’re using), and cook according to the directions.
I let the chicken sit at room temperature for about 10-15 minutes before placing it in a hot pan. Letting the chicken come to room temperature helps it cook more evenly, and retain more juiciness.
Adjust the chipotle and honey to fit your preferred taste. This recipe is a great starting point for both. If you prefer sweeter chicken, double the honey. If you prefer the spiciness and smokiness, add another chipotle pepper or more adobo sauce. We all have different tastes, so feel free to play around and make this just like you like it!
I love red onion in this recipe, but a yellow or white onion will also work!

How to Make Honey Chipotle Chicken Tacos:
- Cut the chicken into small cubes, and toss in the seasoning blend. Set aside for about 10 minutes.
- Heat the avocado oil in a skillet over medium heat. Cook the chicken, tossing occasionally, for about 5 minutes. The chicken will be mostly cooked at this point.
- While the chicken cooks, mince the chipotle peppers. Scoop them into a small bowl, and stir in the adobo sauce, honey, red onions, garlic, and a pinch of salt.
- Pour the honey chipotle mixture into the skillet with the chicken, and toss to coat the chicken in it. Continue to cook the chicken, occasionally tossing in the sauce, for another 2-3 minutes until browned and cooked through.
- Turn down the heat underneath the to low. Stir in the water and butter until the butter is melted and a silky sauce forms.
- Stir in the lime juice and turn the heat off from underneath the pan. Let the chicken rest for 2-3 minutes, then serve in warmed tortillas with more onion, cilantro, cheese, avocado, or any toppings you love!
