Back in KC, there was a place just down the block from my loft that made my favorite breakfast burrito. It. Was. DIVINE … and lovingly stuffed with all the breakfast necessities : hash browns, cheese, eggs, and meat. It’s so easy to walk down and grab one of these burritos and a coffee for $9, but I I was like, “I know I can make these at home … and I KNOW it can be way cheaper.” 🙂
So, it was settled. I had to make them for a weekend breakfast at home. But upon gazing into my packed refrigerator, my eyes settled upon another ingredient that I REALLY wanted to include : some creamy black beans that I had just made for a new photoshoot. So, I decided to be creative, and add an awesome twist to my favorite breakfast burritos. So, I made creamy black bean, cheesy egg, and seasoned hash brown breakfast burritos! <3
These breakfast burritos are ridiculously good. It’s seriously beans, potatoes, eggs, and cheese, wrapped in a fajita-sized flour tortilla. Ta da! Nom nom nom. The only “complicated” part of this entire recipe is making the three different components. First, you have to make the creamy black beans. The recipe for creamy black beans makes more than enough for these breakfast burritos, so it’s ideal to use the leftover beans as a side dish for things like pork carnitas tacos, spicy shredded beef, or my favorite chicken quesadillas! (The beans reheat really well!)
The hash browns are easy, but take a bit longer than the eggs. Start making the hash browns right after you start the creamy black beans, and they should both finish around the same time.
The eggs are also insanely easy, as they are literally just eggs and milk, scrambled over medium heat, then mixed with cheese. Start making the eggs after the hash browns start to crisp up a little. The eggs only take a couple of minutes, so they’re definitely the last piece of the puzzle. 🙂
To build your breakfast burritos, first spread a thick layer of creamy black beans onto your tortillas. Then, scoop the cheesy eggs directly onto the beans. Cover both with seasoned hash browns, and top it with salsa of your choosing. That’s it!
These bad boys are really good for brunch. They’re easy, they’re filling, and they’re pretty tasty with a hearty bloody mary. You’ll be feeling like a new person in no time. 😉
stuffed breakfast burritos with hash browns, eggs, and creamy black beans
Ingredients
for creamy black beans :
- 1 Tbsp. unsalted butter
- 2 small cloves garlic, minced
- 2/3 cup finely chopped white onion
- 1 can refried black beans 15.5 ounces
- 1/4 tsp. cayenne
- 1/2 tsp. cumin
- 1/3 cup sour cream
- 1 Tbsp. cholula or your favorite hot sauce!
for hashbrowns :
- 1 Tbsp. unsalted butter
- 1 cup frozen hashbrowns
- 1/2 tsp. seasoned salt
- 1/2 tsp. garlic powder
- 1/2 tsp. cracked black pepper
for eggs :
- 3 large eggs farm fresh
- 2 Tbsp. milk whole or 2%
- pinch of salt and cracked black pepper
- 1/3 cup shredded cheese cheddar or pepper jack
for burritos :
- 2 8 inch flour tortillas
- your favorite salsa
Instructions
for creamy black beans :
- Melt butter in a small sauce pan over medium heat. Add onion, cook 3-4 minutes until tender, then add garlic and cook another minute until soft and fragrant.
- Add beans, and combine thoroughly so they begin to melt with the onion and garlic.
- Once the beans are smooth and melted, add the cayenne and cumin and combine well. Add the sour cream and hot sauce (optional), and stir thoroughly.
for hash browns :
- Melt butter in a skillet. Add hash browns and seasonings, stir to mix them together, then cook hash browns according to package directions until browned and crispy.
for eggs :
- Heat a small saute pan over medium heat. Whisk eggs, milk, and salt and pepper together. Slowly pour the egg mixture into the saute pan, and use a flat rubber spatula to constantly stir. Once the eggs start to firm up, sprinkle in the cheese. Mix the cheese in until melted, and eggs are "scrambled". Remove from heat.
for burrito :
- Warm tortillas in the microwave. Once warmed, spread one layer of creamy black beans onto the middle of each tortilla. Top the beans with eggs, and then top everything with hash browns. Spoon your favorite salsa onto the top of the hash browns, and lift the sides of the tortilla up to meet on top of all of the ingredients. Use a toothpick to pin the tortilla together, and form a "burrito".Serve hot!
